Method: Place the catfish filets and the melted margarine in a flat dish, saturating the catfish completely. Sprinkle Jazz Bon Ton Seafood Seasoning onto one side of the catfish filets, completely covering the filets with a coat of seasoning.
Carmelize Holy Trinity and Margarine in 2 Quart Sauce Pan over medium heat. Add Rice and stir, coating each rice granule with Margarine. Add remaining ingredients and stir until sufficiently mixed. Boil over medium/high heat with no lid until all water is cooked out and rice is fluffy.
