Using a cutting board and knife, cut pepper in half, pull the veins, and wash out the seeds. Continue to cut off the top. Slice the pepper into ¼ inch slices. Cut the onion in half and peel off the outside layer. Cut off the top and the bottom.

Butterfly the pork but in half and season all sides with Head And Country Seasoning. Spray with apple juice to help the seasoning stick. Repeat this 2 or 3 times, sprinkling seasoning on one side, spray with apple juice, and then move on to the next side.
Cut a small pocket from the side of the filet and stuff the pocket with blue cheese. Liberally sprinkle Jim Baldrige Seasoning on the fillet. Set your grill to high and sear your fillet. Move it to the side on medium heat to finish.
